July 4th in Highlands Ranch

July 4th was a fun family day that started with our neighborhood pancake breakfast in our front yard. Our friends who have a couple of restored fire trucks came by and let the kids climb aboard and pose for pictures. We fed our friends breakfast before they had to run off for the parade. Later in the day we went for a swim and then shot off a few fireworks before the community display at town center nearby. For dinner we grilled pork loin chops stuffed with smoked Gouda cheese, pico de gallo, and wrapped in jalapeno pepper and bacon.
